Windows 10 EDGE huge disk space usage in /appdata/local/packages folder

Waited hours for user's backup to restore (from one Win 10 PC to another Win 10 PC using Win 7 backup tool).
Backup included "ProgramData" and 2 of the "Users"

On the NAS the condensed backup directory was about 90GB; Copied to the new PC, the directory was about 180GB. Except I came to find out that all the user's content folders were EMPTY ... desktop, documents, fav, contacts, pictures!
i.e. C:\Program Data <- seems complete ~ 4GB
C:\Users\JoeBlo <- all empty folders except AppData and a few dotted directories (higher up in the list alphabetically)
C:\Users\Public <- empty folders

The bulk of the space > 175GB is in /AppData/Local/Packages/Microsoft.MicrosoftEdge_8wekyb3d8bbwe
It's as if it got interrupted and couldn't proceed to any folders later alphabetically after AppData

Properties on this folder Microsoft.MicrosoftEdge_8wekyb3d8bbwe show the > 175GB
However, clicking into it and selected all folders there and clicking Properties only shows ~100MB total ! I can't narrow it down to one folder to tell where the usage is!

175 GB is an extreme amount of space to use. I'm hoping to tell what its is to have users disable that PART or function of Edge or find some way to block the EDGE browser from being used entirely. Am trying to gain full control/ownership of the entire "Microsoft.MicrosoftEdge_8wekyb3d8bbwe" folder and subfolders hoping that will show me accurate size properties then. It took 3 hours to change ownership and now looking like another 2-3 hours to unset the "Read only" flag.

Which subfolders within here typically grow hugely like this?
Is it "by design" due to security/privacy that it's not readily accessible?
