Defender definition updates force a reboot on me every day, disrupting my work

Almost every single day, my Windows 10 computer undergoes a forced reboot and this disrupts my work and it is very frustrating.

After the reboot, I notice that I received a new Security Intelligence Update for Microsoft Defender Antivirus.

It seems if I walk away from my computer for more than 15 minutes or so, there is a good chance I will come back to find that it has rebooted on me due to a virus definition update for the day.

I can't seem to find any way to stop these forced reboots from happening or to give me control over them.

These virus definition updates seem to happen at random times, even during my "working hours" that I have specified for general Windows Updates to avoid.

These virus definition updates don't seem to be tied to the other Windows Updates, because even when I had temporarily paused my Windows Updates (as a test) I still received a Security Intelligence Update and it still forced my computer to reboot.

Is there a way I can either:

.... schedule a time for when these virus definition updates should occur

.... have it prompt me before a reboot, so I can perform the reboot when it is convenient for me

This is very frustrating!
