First configure your Application Log so that it will not fill up and stop
the system. The following steps will result in LOTS of entries in your
Application Log!

In Exchange System Manager click and expand Administrative Groups -> First
Administrative Group -> Servers. Then Right click your server name and
choose Properties.

On the Diagnostic Logging tab Expand MSExchangeIS and highlight Mailbox. In
the Categories window, set Logons and Access Control to Maximum and click
OK.

You will now find an Application Log entry for every mailbox access. I
believe that you will be wanting to look for Event ID 1016 but, I am no
longer sure if that is the correct number.
