Windows Server 2008 Inside Out by William R. Stanek is good for a single book.
The MCITP Self-Paced Training Kit for Windows Server 2008 Core is not bad if you really want to learn some in-depth information about administering Server 2008, but it comes at price in both money and time. It also included evaluation software for windows Server 2008 if you don't have it already.
