Which OS and SP are you running?
Sounds like the server crashes when you logoff.
Have you checked the EventLog on the server for any messages
related to the restart?
Also configure your server to *not* automatically reboot when a
critical error occurs. That will give you a BSOD with a STOP error
code if it really crashes. Chances are that it will be a STOP 0xab
error code.
If so, and assuming that you run 2003 SP1 or SP2, there are a
number of hotfixes for this STOP error (but verify first that this
really is happening to your server!):
928942 - Error message when you log off a Terminal Services session
on Windows Server 2003 Terminal Server with Service Pack 1 or with
