I have a server and although it's new and running all the same apps as
the old server (Swing Migration), the new server is running PeachTree
2007 Server components. The server will hang a couple times a week
without any warning and no log entries - can't get past Applying
settings and most times the screen just freezes.

I disabled the PT 2007 Pervasive Database service and didn't have any
problems for several days, but, within 4 hours of enabling it, it hung
the server again.

Anyone running Peach Tree 2007 on a Windows 2003 Standard R2 server with
SP2 installed?

As a follow-up I removed PT 2007 Services from the server and it's run
fine for the entire day - what a POS Pervasive DB is.
