Remote uses are accessing a Win2003Std R2 in TS mode to access databases and
exchange hosted on a Win2003SBS R2.

Remote Users (WinXP Pro) -- TS (Access : Outlook) -- SBS (MDB : Exchange) --
Local Users (Win XP Pro : Access : Outlook)

Logon time and response when connected are very good. However the logoff
period between clicking Logoff and the window closing can be several minutes.
Any way of speeding this up? Currently temporary files are assigned on the
TS Server for each session.

SBS - IBM x3500 2xXeon Quad 4GB RAM
TS - Dell 2600 1xXeon Dual 2400 4GB RAM

Anything in the EventLog on the server?
What's probably happening during the delay is the unloading of the
user's profile and possible saving it on a file server in case you
have roaming profiles.
Have a look at the size of the profile and redirect as my parts of
it out of the profile directory (minimally the My Documents
folder).
