I have a windows 2000 domain contoller which is also a DNS server. Many
clients and other servers you this DC as there DNS. I now want to demote
this DC to a normal server but leave the DNS server running. Will the DNS
server still run on this server OK and will the other servers and PC still
be able to use this servers as a DNS Server.

Make sure you convert any AD integrated zones to standard primaries (or
secondaries - if you have other DNS servers with AD-integrated zones)

I have other other domain controllers running as DNS. But this server will
not be DC anymore so can it still function as a DNS. WHat will the DNS be,
will it function as a AD integrated zone or will it automatically convert to
another type zone like primary or secondary.
