Is there an official release date yet for Server 2008 with Hypervisor?
I dont mean RC or Beta, but the full final release version.

Not at the moment, other than "within 180 days of 2008 RTM"

Do we know if it will be possible to upgrade current virtual servers
to hypervisor once it is available? Or should we hold off on
virtualisation until release day?

Here is the position as I understand it. There will probably be another
RC candidate before RTM. Virtual machines created under that RC (RC1?)
should run under the RTM version. Those created under RC0 may run, but I
wouldn't rely on it. Those created before that I wouldn't even think about.
