I know Server can support both standards. Are there two different copies of
server available, 32 & 64 or does 1 dvd/cd do both? We are looking to
implement either Windows Server 08 Standard or Enterprise.

RE: Windows Server 2008 32bit / 64bit

The system requirements are

Minimum: 1GHz (x86 processor) or 1.4GHz (x64 processor)
Recommended: 2GHz or faster
Note: An Intel Itanium 2 processor is required for Windows Server 2008 for
Itanium-Based Systems

How does the licensing work? Do you need separate licenses for each version?

Hello rmaher07,

One server, one license. Except you have software insurance. See also here:

Hello rmaher07,

For licensing better contact your vendor or call MS support hotline.
