mbr to gpt disks

We have to expand our disk space on our file server, we are running out of
disk space. Unfortunately to do so would go over 2 tb so we have to convert
from mbr to gpt. I thought this would be seamless, i.e add the disks in raid
the go into windows disk manager and convert.

To my horror according to microsoft you have to delete the partition then
convert to gpt then you have to go through the hassle of restoring your
data. Is there any way of doing this without have to delete data and
restore?

I've a couple of hp dl320s - 6 * 750gb sata drives in a raid6. They are
not heavily used but fairly basic file & print member servers, probably
going to use w2008.

Is there any reason to leave partition sizes to 2TB or just go for gpt
from the start with one large parition? the server has 6 free slots to
add further 750gb disks to the array later on.
