I'm running 2003 server with TS at my office and I would like to change out
my LPT printer at home with a Ethernet based printer since USB is not
supported. Will I be able to print to a Ethernet printer through my RDP at
home?

Yes you will, once you are able to print to it from your local machine, you
will be able to print on it once you connected to a remote server as well.
